Bison Tomahawk: Exceptional Balance of Meat and Aroma (Premium Cut)
Tomahawk steak is a cut from the ribeye with a long rib bone. The long, impressive bone not only gives it a spectacular appearance but also acts as an excellent heat conductor, releasing an additional aroma as soon as it hits the grate. Bison meat, although similar to beef, is exceptionally lean and richer in flavour, yet lacks the typical gamey aftertaste. This is an ideal position for an active Grill Master in the exotic meats segment.
Noble Premium Bison Farming: Purity, Nature, and Welfare
The Canadian brand Noble Premium Bison is responsible for the bison farming in our offer. This certified farm ensures natural living conditions across over 3600 ha of pastures in Western Canada. Animals grow at a natural pace with minimal human interference. The feeding program includes approx. 20 months of pasture grazing (grass-fed) and only 90–120 days of grain-finish feeding. This minimizes stress and ensures high quality flavour of the meat.
Flavor and Preparation (Reverse Sear)
Bison Tomahawk is wet-aged for about 40 days. This process enhances its tenderness and highlights the aroma. The meat also contains a higher amount of vitamins, minerals, and protein than beef, making it an ideal choice for those on a diet.
Application: The Reverse Sear method works best (slow roasting at 120°C to 50°C, followed by a quick sear).
Doneness: The recommended level is Medium Rare (55°C – 57°C). The meat is lean – avoid well done.
Storage: Freezing at -18°C sealed tightly maintains quality for up to 6 months.
