    We select only meat from young heifers from Polish farms—this guarantees tenderness and subtle marbling. The beef in our offer is sourced from cattle living stress-free, naturally fed (grass-fed). It then undergoes minimum 21 days of wet aging, a process crucial for developing full flavour and locking in juiciness.

    Culinary Versatility

    This beef cut is ideal for:

    Grill/Pan: Quick searing of the whole cut over high heat, followed by slow indirect finishing (reverse sear method or in the oven) to an internal temperature of 55°C (Medium Rare).

    Sous Vide: 55°C for 90 minutes, followed by a quick sear for color and flavor. This ensures perfect texture and control over tenderness.

    Tartare/Stir-fry: Excellent for raw preparation as tartare or for quick stir-fry (sliced thinly) in a very hot wok.
