The highest quality doesn't come from nowhere. Sirloin is sourced from the lumbar section of the carcass (just behind the ribeye) – a cut valued for high marbling and tender meat. In the case of Wagyu BMS 8-9 steaks from Namibia, we are talking about meat with exceptional marbling that melts during grilling, imparting an intensely buttery flavour to the steak.
Genetics and Farming (Sanga Crossbreed)
The meat comes from purebred Japanese Wagyu crossed with the local Sanga breed, perfectly adapted to Namibia's dry conditions. This combination yields an amazing effect: appropriate carcass size, high marbling up to BMS 8-9, and a characteristic, distinct yet delicate meaty flavour. The cattle from Whispering Dunes are grass-fed, and corn-fed during the final opas period in an 800-day system.
Challenge and Preparation: Luxury for Special Occasions
Wagyu Sirloin Steak is a very versatile piece of meat. It is ideal for celebrating success, promotion, or an anniversary or when you want to make an exceptional, elegant gift.
Aging: The meat is wet-aged for 40 days, which increases its tenderness and flavor.
Cooking Methods: Best on the grill or a cast-iron pan – quick sear for 2–3 minutes per side. You can also use the sous-vide method (55°C for 2 hours).
Serving: Be creative with additions (butter, garlic, rosemary), but be careful not to dominate its buttery taste.
