    The Heifer Secret: Genetics and Tenderness

    Origin: This is the Tomahawk from Ribeye (with the rib bone) from a young heifer – a female bovine before her first calving. This natural cycle promotes the accumulation of intramuscular fat (marbling), which directly translates to the meat's tenderness and juiciness.

    Farming: Our farmers prioritize natural grazing (grass-fed) with a grain finish. Cattle grow stress-free, ensuring a clean flavour.

    Aging: The steak is wet-aged for min. 21 days to develop aroma and maintain tenderness.

    Perfect Preparation: Techniques and Temperature Magic

    This beef cut is versatile. Prepare spectacular bone-in cuts for the grill.

    Grilling: First, sear over high heat for 2–3 minutes per side, then move to a cooler part of the grill for indirect finishing to the desired doneness.

    Alternative: Cast-iron pan + oven (sear to gold, finish in the oven at 180°C for 5–8 minutes).

    Resting: 5–10 minutes rest is mandatory!
