The Heifer Secret: Genetics and Tenderness
Origin: This is the Tomahawk from Ribeye (with the rib bone) from a young heifer – a female bovine before her first calving. This natural cycle promotes the accumulation of intramuscular fat (marbling), which directly translates to the meat's tenderness and juiciness.
Farming: Our farmers prioritize natural grazing (grass-fed) with a grain finish. Cattle grow stress-free, ensuring a clean flavour.
Aging: The steak is wet-aged for min. 21 days to develop aroma and maintain tenderness.
Perfect Preparation: Techniques and Temperature Magic
