Ossobuco, though called a steak, is a culinary gateway to traditional, slow-cooked dishes. This is a unique piece of meat, cut across the bone. Its strength lies in the connective tissue and bone marrow – during long cooking (braising), Ossobuco stands out with an intense, deep flavor and unparalleled, buttery texture. The Italian name osso buco means "bone with a hole" and refers to the cross-section of the shank bone. This is meat that literally falls apart on the fork, embodying the essence of exquisite slow food.

Natural Origin, Genuine Quality 

Our Ossobuco comes from the Pirinat farm (Spain) – a family company focused on ethical cattle farming and sustainable agriculture. Animals are naturally fed (without antibiotics, hormones, or GMO feed) and graze freely on the green pastures of the Pyrenees. Slower development gives the beef deep flavor and excellent structure. The meat holds the BIO certificate.

Preparation Method – Long Cooking is Key

Ossobuco, being a tougher muscle rich in collagen, is not intended for quick grilling. The optimal preparation is long, slow braising or roasting (slow cooking method), until the meat becomes buttery and "falls off the bone."

Pan-Searing: Use a pan only to sear the meat in clarified butter to caramelize the surface before braising/roasting.

Braising: Optimal preparation involves slow cooking until the meat achieves tenderness and juiciness.
