Cote de Boeuf is a massive steak that requires precision:

Preparation: Remove from the fridge 30–60 min prior (room temperature – must have). Pat dry, season with salt.

Processing (Reverse Sear): The reverse sear method works best. First, roast slowly in the oven (120°C) until the internal temperature reaches 50°C (for medium rare), then a short grill over high heat for a browned, crispy crust.
