Presa Iberico is one of the most exclusive parts of the pork carcass. It is a part of the neck. Incredibly juicy and flavorful due to the rich overgrowth of intramuscular fatty tissue popularly known as marbling. It has a myriad of culinary uses. It is perfect for grilling and for short roasting. It can be braised, baked whole low and slow or ground into burgers. Served slightly pink, it guarantees an explosion of flavor.
