Teres Major steak USA Black Angus, also known by the names Petite Tender or Chuck tender is a small muscle cut from the beef shoulder. Not only does it look like a small tenderloin. It is also tender and juicy like a tenderloin. In addition, when cooked, it is full of beefy flavor. It is perfect for grilling. It will also work very well prepared using the sous vide technique, roasting or pan frying. Excellent for those who care about a low-fat diet and athletes.
It contains little fat and little connective tissue. Despite its relatively low marbling, it is characterized by tender, juicy and tender meat. It does not do motor work and therefore its texture is very similar to beef tenderloin. It is also shaped like a small tenderloin. Note the structure of the meat is so tender that you should not over marinate it. We recommend marinating a maximum of one hour before frying.
