In Poland, the BBQ culture is just being born. In our country, this element is cut with a short rib bone and sold at a very low price as "szponder", something for broth. In the USA, South America or Australia, this element has a long rib bone and is sold as a lobe, usually with 3 ribs. It is a beloved and desirable element for the BBQ technique because of its extraordinary flavor and juiciness. We import just such pieces, and then our skilled butchers cut them individually along the ribs and pack them again in vacuum. The ribs are then frozen. Such a portion is perfectly handy both for roasting on the grill and in the home oven.
