It is one of the most tender and valuable cuts of pork. Thanks to its unusual marbling, this cut is extremely juicy when prepared on the grill or in a skillet. Iberico pork is considered the best in the world thanks to its special free-range animal husbandry and diet based on acorns and herbs growing in the meadows of Spanish "dehesas."
