Marbling is the all-too-important part of the Ribeye steak. We want that thick line of buttery, melt-in-your-mouth fat to offset the delicate flavour of the beef. Polish beef is quite amazing in both texture, flavour, and marbling. The 5 ribeyes I ordered were excellent for grilling or searing in a skillet. A dash of garlic-rosemary butter or cooking in sous vide before searing brings out an amazing taste that pairs well with a crisp salad and an ash-baked potato. A favorite that I know I'll be ordering many times over.
