Traditional Long-Aged Hams
These meats are characterized by a simple recipe and a clean label. Available in our store, long-aged hams contain only five ingredients: raw material, salt, curing salt, sugar, and lactic acid bacteria culture. Curing salt is a safe mixture of salt and sodium nitrite, essential for meat preservation and color enhancement. The production process of long-aged meats relies on reduction, where 1 kg of raw material yields only 650 g of the final product. Aging takes 28 days, without the use of additional substances or enhancers. Patiently waiting for the full flavor to develop while maintaining established quality and safety parameters ensures a unique, natural taste. The product contains no additional preservatives. Thanks to high microbiological purity, the meats are safe and free from bacterial contamination, offering a shelf life of up to 6 months.
