Black Angus USA eyeround medallions are a very lean beef steaks. They will taste best braised and served with a creamy sauce such as mushroom sauce. They are relatively inexpensive, so they are ideal for an everyday dinner. The serving form can be typically dinner with potatoes and stewed vegetables or salad. Description

Black Angus USA eyeround medallions are quite a controversial product. The quality of American beef is so high that even a steak can be made from eyeround muscle (a leg piece definitely intended for braising and long cooking). It is important to remember about accuracy and precision during the heat treatment process. Eyeround steak should not be kept on the fire for too long, as it may lose its qualities and become too dry. We recommend that you marinate it before preparing it to enrich its flavor. If you add sour juice such as lemon or lime to the marinade after a few hours it will be more tender.

Alternatively, you can gently smash it the way you smash a pork chop. You can also prepare it in a coating a'la pork chop. We also recommend stewing it in a delicate, creamy sauce such as mushroom sauce.
