The meat is lean and contains a lot of connective tissue, which is why it's best suited for low and slow cooking techniques like BBQ (long, slow cooking at low temperatures). The time and love put into its preparation will be rewarded with an epic flavor and juiciness. It comes at a very reasonable price and is sourced from the butchering of our young, fatty premium heifers.
